Tahini Bread
Tahini Bread is a totally AMAZING fluffy bread that is gluten-free, dairy-free, grain-free, sugar-free, yeast-free AND nut-free! You’ll love this nutritious, delicious, easily-digestible baked good—and it’ll make your home smell amazing.

INGREDIENTS
2 tablespoons whole chia seeds
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup orange lentil flour
2 teaspoons vinegar
6 tablespoons raw tahini
2 tablespoons of silan (Date syrup)
Salt to taste
Various seeds and nuts to garnish the top
INSTRUCTIONS:
Preheat the oven to 375-degree. In a bowl, mix chia seeds with 1/4 cup water and set aside 3-4 minutes. Grease a loaf pan and set aside.
Meanwhile, in a medium mixing bowl mix baking powder, baking soda, lentil flour and salt.
Add vinegar, tahini, silan, and ⅓ cup of water, chia mixture, and mix well. The batter will be thick and not completely smooth. The vinegar and baking soda create a bubbly reaction, which is key to fluffy bread, so it’s important not to let the batter sit too long.
Pour the batter into a prepared loaf pan and sprinkle the top with whatever you want. I used flax, sunflower seeds, sesame seeds and pumpkin seeds.
Immediately insert the pan into the hot oven. Bake for 45 minutes or until a toothpick, inserted into the middle of the loaf, comes out clean. Remove bread from the pan and allow to cool on a wire rack. Do not be tempted to snack. Enjoy this bread with an appetite. After two hours, the bread should be cool and be firm enough to slice.
